MINI MEAT LOAVES WITH
GREEN BEANS

egg, lightly beaten

cup purchased pasta sauce

cup fine dry bread crumbs

cup fresh basil leaves, coarsely chopped if large

lb. lean ground beef

cup shredded mozzarella cheese (4 oz.)

12-oz. pkg. fresh green beans, trimmed

Tbsp. olive oil
Crushed red pepper (optional)

Preheat oven to 450°F. Bring a m edium saucepan of salted wafer to
boiling. In large bowl com bine egg,

cup of the pasta sauce, bread crum bs,
2 tablespoons of the basil, and

teaspoon
sa lt.
Add beef and

the cheese; m ix well. Divide beef m ixture in four equal portions. Shape
each portion in a 5 1
/2x2-inch oval. Place on 15xl0xl-inch baking pan.
Spoon on rem aining pasta sauce and sprinkle w ith rem aining cheese.
Bake 15 m inutes or until internal tem perature registers 160°F.

M eanwhile, cook green beans in boiling salted w ater for 10 m inutes.
Drain; toss w ith 1 tablespoon olive oil and red pepper. Serve w ith m eat
loaves. Sprinkle all w ith rem aining basil leaves.
